Patong sits a few minutes from the Andaman Sea, and our seafood comes from suppliers who run that water. Whole seabass arrives in the morning. Tiger prawn ranges from market-size to the big ones we grill over flame. The same crabs going into the curry pot in the evening were swimming that morning.
The cooking decides the dish, we steam fish in a sharp chili-lime broth or deep-fry it to crackling and glaze with sweet-and-sour tamarind. Tiger prawns go through the wok with black pepper, or get the curry-powder treatment, or end up in our Pad Thai signature. The Creamy Seafood Bucket, prawn, crab, squid and mussels in coconut-cream curry, is the table-stopper for groups.
Everything is halal-friendly: the seafood is naturally so, and the kitchen is pork-free by default. Air-conditioned dining room, open noon to 2am, set five minutes back from the strip in central Patong.
